capsicums, aged cayenne and aged pepper?

Almost all of the brands I see have salt.

Franks is tempting however there is salt.

  1. Just whip in a few slices of jalapena pepper to your recipe and forget the ready made ones.


  2. I am a former chef and a chili head and use 1 bottle of Jamaican Hot sauce a week, on everything I eat except cereal and coffee. And those ingredient unfortunately are critical, the salt ages and extracts the flavours, the other ingredients keep it from spoiling and with the gums separating into solids and vinegar.

    The first fellow was correct for fresh homemade with no preservative, just buzz your favorite hot peppers in a blender or food processor with vinegar, a bit of salt for taste only, add some garlic for and extra kick, blender and use as a paste or strain out the solid, you will have to mix it as time goes on the pepper solids will sink, I make my own with scotch bonnet peppers, not for the faint of heart, try making your own with various peppers and see what strength and heat levels you like.
