  2. Egg Pie

    3 eggs

    1 cup white sugar

    1/4 cup butter, melted

    2 tablespoons all-purpose flour

    1 cup milk

    1 teaspoon vanilla extract

    1/2 teaspoon ground nutmeg

1 recipe pastry for a 9 inch single crust pie

Bake pie shell at 400 degrees F (205 degrees C) for 5 minutes. Set aside.

Combine melted butter or margarine, sugar, flour, milk, vanilla, and nutmeg. Add beaten eggs, and blend well. Pour filling into partially baked pie shell.

Bake at 325 degrees F (165 degrees C) for 45 to 55 minutes, or until an inserted knife comes out clean. Do not overcook.

If you don't have a pie shell handy, just bake it in a pit plate for a fast sweet snack.

"It may surprise you that such few and simple ingredients, egg yolks, sugar, cream and vanilla extract, make this favorite dessert. Plan ahead. You'll need to refrigerate the custard twice before serving!"

    INGREDIENTS:

    6 egg yolks

    6 tablespoons white sugar,

    divided

    1/2 teaspoon vanilla extract

    2 1/2 cups heavy cream

    2 tablespoons brown sugar

    DIRECTIONS:

    1. Preheat oven to 300 degrees F (150 degrees C).

    2. Beat egg yolks, 4 tablespoons sugar and vanilla in a mixing bowl until thick and creamy.

    3. Pour cream into a saucepan and stir over low heat until it almost comes to boil. Remove the cream from heat immediately. Stir cream into the egg yolk mixture; beat until combined.

    4. Pour cream mixture into the top of a double boiler. Stir over simmering water until mixture lightly coats the back of a spoon; approximately 3 minutes. Remove mixture from heat immediately and pour into a shallow heat-proof dish.

    5. Bake in preheated oven for 30 minutes. Remove from oven and cool to room temperature. Refrigerate for 1 hour, or overnight.

    6. Preheat oven to broil.

    7. In a small bowl combine remaining 2 tablespoons white sugar and brown sugar. Sift this mixture evenly over custard. Place dish under broiler until sugar melts, about 2 minutes. Watch carefully so as not to burn.

    8. Remove from heat and allow to cool. Refrigerate until custard is set again.

    Baked Flan

"This is a quick and easy baked flan recipe that is prepared in the blender. It's great served warm or cold and has a creamy texture like custard."

    INGREDIENTS:

    2/3 cup white sugar

    1 (14 ounce) can sweetened

    condensed milk

    2 cups heavy cream

    1 cup milk

    5 eggs

    2 teaspoons vanilla extract

    DIRECTIONS:

    1. Preheat oven to 350 degrees F (175 degrees C).

    2. In a small nonstick saucepan, heat the sugar over medium heat. Shake and swirl occasionally to distribute sugar until it is dissolved and begins to brown. Lift the pan over the heat source (4 to 6 inches) and continue to brown the sugar until it becomes a dark golden brown. You may slightly stir while cooking, but continually stirring causes the sugar to crystallize. Pour caramelized sugar into a 1 1/2 quart casserole dish or a large loaf pan, and swirl to coat the bottom of the pan evenly.

    3. In a blender, combine sweetened condensed milk, cream, milk, eggs and vanilla. Blend on high for one minute. Pour over the caramelized sugar.

    4. Place the filled casserole dish into a larger pan and add 1 inch of HOT water to the outer pan. Bake in preheated oven for 50 to 60 minutes, or until set.

  6. Flan or crembrule

  7. Baked Custard is a Classic-

    Ingredients:

    2 cups milk

    2 eggs

    1/8 teaspoon salt

    2 tablespoons sugar

    nutmeg

    Preparation:

Beat together milk, eggs, salt, and sugar. Pour into custard cups; place cups in a pan with hot water nearly to top of custard line. Sprinkle each with nutmeg and bake at 325° for about 40 to 55 minutes, until custard is set. This really depends on depth of the baking dish. A knife inserted in center should come out clean. Makes 4 to 6, depending on size.
