Are there any recipes/websites for lunch or dinner that i can just heat up in microwaves for school/work?

  1. PASTA with TOMATO MUSHROOM SAUCE

    1 pound penne

    3 tablespoons extra-virgin olive oil

    2 medium onions, diced

    1 teaspoon kosher salt

    1/2 teaspoon freshly ground black pepper

    3 cloves garlic, minced

    8 ounces button mushrooms, sliced

    1/3 cup dry red wine

    4 cups torn escarole (optional)

    3/4 cup chopped fresh herbs (such as parsley and oregano)

    1 28-ounce can crushed tomatoes

    1 cup thinly sliced basil leaves

    1/2 cup freshly grated Pecorino Romano or Parmesan

    Cook the penne according to the package directions.

    Meanwhile, heat the oil in a large saucepan over medium heat. Add the onions, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper and cook, covered, until the onions are softened, about 8 minutes. Add the garlic and mushrooms and cook, covered, for 6 minutes more. Add the wine and cook, uncovered, for 3 minutes. Stir in the escarole (if using) and chopped herbs, season with the remaining salt and pepper, and cook for 4 minutes. Add the tomatoes and heat through. Stir in the basil.

    Transfer the pasta to plates, spoon the sauce over the top, and sprinkle with the cheese.

    Southwestern Cheesy Chicken Spaghetti

    Ingredients

    1 pound whole wheat spaghetti

    3 whole boneless, skinless chicken b*****s, finely chopped

    2 tablespoons olive oil

    Salt (to taste)

    Pepper (to taste)

    1 26-oz. jar black bean & white corn salsa

    1 16-oz. package finely shredded Mexican-style cheese



    Method

    Cook spaghetti according to package directions. Meanwhile, in a nonstick skillet, combine chicken, olive oil, salt, and pepper. Cook and stir over medium heat about 10 minutes or until chicken is no longer pink. Drain spaghetti; stir in chicken and salsa. Preheat oven to 350 degrees. Pour spaghetti mixture into a baking pan; sprinkle with cheese. Bake about 25 minutes or until heated through.

    Number of Servings: 8-10

  3. Just about anything you can make for dinner, as long as you put it in a micowave safe dish will work. ( I buy the microwave compartment dish with cover).Some things that were crispy for dinner may not be crispy for lunch, but the flavors will still be there.

I like casseroles for that kind of thing...shepherd's pie, spaghetti, homemade mac and cheese with tuna & peas is yummy. my husband makes a goulash with ground beef, corn, macaroni noodles, cream of chicken soup, and cream of mushroom soup (just soup right out of the can, don't add milk or water). simple and easy but yummy!

    www.allrecipes.com is a good website...the company's coming cookbooks are good too for casseroles, things to do with leftovers, easy to make dinners, etc.
