I just discovered three unopened packets of cornflakes close to expiry date in my pantry and I wondered if I could do something useful with them?

  2. Some sort of cake?

  3. They will stay good for months past the expiry. They are filled with things that keep them stable.

Yes, however, they can be crushed up and used for breading. I know they can also be incorporated in biscuits, but have no recipe. Here's an idea for breading and cooking...

    Chicken, Fish, or Pork cutlets

Mix a little milk and egg

Put seasoning (salt pepper garlic powders, etc in the crushed flakes

Run the meat through the egg milk mixture

Dip in flakes until coated well. May double dip back in the milk egg and flakes a second time for better coating.

Place on oiled baking sheet on (I think) gas three or four and bake until done, maybe 35-45 minutes depending on thickness.

Adjust oven up and down to prevent over browning.

Finally, pull out just when juices run clear or the meat thermo reads the right temp.

The food will cook round five minutes as it sits out of the oven.

Give it a go. I think you might like this way of doing. The calories saved will be significant if that matters.
