  3. I don't think I can do as good of a job as AAC, but just a tip: you need to consider the purpose of the flour in the recipe. For baking something savory, you'll want to use one kind of "flour." If it's sweet, a different one might be more appropriate. If it's for thickening, corn or potato starch is a good option.
