Simple answer

part of evolution.

Life evolved during last 1500 million years or so from single cellular soft bodied lifeforms to complex multi-cellular life forms like man. Mutation and selection produced diverse life forms which competed for food and shelter and the fittest survived and many became extinct like dinosaurs. The same holds good for plan life, what kind of life forms would evolve further in time could be only a guess at present. Laboratory created mutations or genetic engineered life forms may shortcut this natural process and one may see lifeforms which may look bizarre to us.
