  1. Yes you are, treat it like white wine

  2. Don't mean to be the sarcastic one here, but how do you prefer it? Sod the rules.

  3. You drink wine at the temperature you prefer. I like my white and rosé chilled. About 6° C. for white and possibly 8°C for a Rosé.

I remember, when living in Hong Kong, inviting a couple over for lunch. The husband considered himself to be an expert in the field of wines, so when I asked them if they would like a sherry, and took the bottle out of the fridge, he gave me a scornful look. It was Bristol's Luncheon Sherry and specifically designed as an aperitif in hot climates. He admitted that it was 'Very good.' I'm sure Bristol would be pleased about the accolade.

When we sat down to eat I produced a 'good' red wine out of the fridge. The guy now knew I had no idea about wine. When he tasted it, he said, 'That's good, very good -but in the fridge?'

'Room temperature is between 16 and 18° C. With the air conditioning on full blast, it's 26° in here, so I stuck it in the fridge for an hour.'

Purists may cringe, but that's the way I cope!

  9. Rose is typically served cold.  You don't need to store it in the fridge, but you should chill it before serving.

Chilled rose is very popular in France on hot summer days.

  10. White & rose wine should be kept at about 55 degrees (F).  Red wine, about 65 degrees.  Champagne and other bubbly wines should be kept at about 45 degrees.  But yes, rose is best served chilled.

  16. Yes indeed.

I´m, Spanish so I can tell you it´s appropiate. All whites and rosés taste better chilled. They taste brighter and fresher. Fuller, more alcoholic whites taste more flavourful a little warmer than fridge temperature: expensive Chardonnays, good white Burgundies, big Australian Semillons, for example, might benefit from coming out of the fridge ten minutes or so before you want to drink them. But they'll soon warm up in the glass if you serve them straight from the fridge.

Lighter, inexpensive, low-tannin reds can benefit from cooling, too, especially in the summer, and/or at a party or picnic. You might try chilling Beaujolais or Beaujolais-Villages, lighter red Loire wines, northern Italian reds including Bardolino and simple, inexpensive Valpolicella. This doesn't work with tougher, firmer, more tannic reds.

The best wines? In Spain there´s a very large variety...
