better for you than th thicker more creamier dressings like ranch & ceasar?

yeah... the creamer dressings are an emulsion of soybean oil and some egg yolk (like the same way they make mayonnaise).  Plus, the creamy dressings are almost all oil.  In contrast, Italian and vinaigrette are like half oil, half other liquids (vinegar, wine, etc.).

generally yes, because ceasar and ranch usually contain heavy cream and so on, as vinaigrette's contain light oils, herbs, and sometimes red/white wine making it a healthier choice as it contains less fat.
