Question:

As a nibble I want to serve bacon wrapped around cheese but not one that melts, would Edam be any good?

or can you recommend another cheese that doesn't melt easily or something else I could stuff the bacon with. I know you can use baby sausages but I'm using them for something else.

  1. Personally, even though its not what you'd call a "mild" cheese, I would use Feta.  Not just because it tastes good, but because it wont melt.

    It does not melt.

    I mixed up halloumi with feta once it dripped all over the place.

The Greek cheese Halloumi has a higher than normal melting point which makes it ideal for either frying or grilling.  It is traditionally made from a mixture of sheep and goats milk, but can be found made from cow's milk.  It has a similar texture to mozzarella, but a slightly stronger flavour.  Feta is probably a bit too crumbly to use to wrap bacon around although it would hold its shape better than Edam or cheddar.

You could use Edam, but the problem with that or any similar cheese like Gouda or Emmenthal is that if the bacon is warm, the cheese will sweat and become unpleasantly greasy/slimey.  Someone has already mentioned feta, but the other option would be halloumi, which you could also actually grill before wrapping in bacon, and this should be delicious - in fact as bacon and halloumi are two of my fave things, I'm amazed I haven;t thought of doing it myself....

  6. i know u dont want the cheese melting but i had these at christmas time from tesco was part of there party food range and they wer gorgous even hours later when they were cold, they are really nice, why dont u make sum before hand and try them and get sumone to be ur guinnie pig and see what they think

  7. I'd recommend you use halloumi cheese. It is a cypriot/greek sheese that is made from goats milk. The flavour is creamy and strong. The cheese is chewy in texture (in a nice way!). Whenever I have eaten it, it is usually sliced and grilled as-is and served with pitta breads and a drizzle of lemon juice.

You speak of rumaki!   Bacon wrapped anything.    I love this.   I normally skip the cheese and wrap it around 3 different things.    I try to keep one sweet, like pineapple... one crunchy... water chestnuts, and lastly one soft and seafoody (I know it's not a word).    Then you can top it with a sauce of choice... BBQ normally works the best but teriaki(sp) is good too or sweet and sour....    Or I have been wanting to try this:   Wrap it up with cherry tomatoes, mangoes, and little bits of steak.   Then throw it all on the grill set to low or not a lot of charcoal (for us old schoolers) then have people pick it right off the grill.    Then can throw the toothpicks straight into the fire.   Easy clean up!   Anyways there are a few ideas for ya.

  9. It would be less messy to wrap the bacon around water chestnuts or scallops.  All cheese will melt under the high heat you would need to cook the bacon.
