Question:

As a pineapple ripens, does it get more sweet and less sour?

in other words, if i prefer pineapple when its still somewhat sour, should i open it before it fully ripens?

or is the sweet/sour balance unrelated to ripeness?

  1. yes !  as it ripens the sugars in the fruit get more intense


  2. As the pineapple ripens it gets sweeter.  If you don't want it so sweet, buy one that's not ripe...but it will be very hard.

    Do not pick a ripe pineapple which you can tell by sweet smell & if top spikes come out easily.
