I never tip the sushi chef separately unless there is a tip jar on the sushi bar. Otherwise I presume that the server and the chef split the tip that I leave on the tab.

One thing I will do is ask the sushi chef if I can buy him/her a beer or sake to drink early in the meal. The chef works hard and a happy chef makes for a better dining experience for everyone!
