  1. It depends on the joint. If it's very classical Japanese, where you place your order with the chef, a tip would be appropriate; on the other hand, if you're sitting in a table in the corner and placing orders through a waiter you

  5. I never tip the sushi chef separately unless there is a tip jar on the sushi bar. Otherwise I presume that the server and the chef split the tip that I leave on the tab.

    One thing I will do is ask the sushi chef if I can buy him/her a beer or sake to drink early in the meal. The chef works hard and a happy chef makes for a better dining experience for everyone!
