  1. I work at a restaurant in Hawaii and serve a lot of ahi/tuna.I  would say order it med well it's not overdone but still juicy.A lot of people think ordering fish med is the same as ordering a burger med but fish is much more delicate than beef and med is still  slightly raw.If you don't like it med-well ask for it well a lot of times when people  accentuate as in  totally done it may confuse the waitress and make her voice your exact words to the cooks which may be why it's overdone. Good Luck I hope this helps.

  2. Tuna should be done at 350 degrees. It will be nice and cooked, but not overcooked.

  3. tuna should be either raw or rare, when its cooked it's totally disgusting.

Don't mind canned tuna though-- all that brine /oil/ whatever does something good to it.

EDIT: You know that stinky fishy taste?? Well cooked tuna   (tuna steak for example ) has it in spaids.  When it's rare or raw it taste fresh and clean.
