Attn: vegetarians--what foods/recipes do you recommend?

I am really sick of my usual meals, which frequently consist of rice and beans. I don't know what to eat. I've been skipping out on meals for this reason for the past week. I would greatly appreciate any recommendations. Thanks a lot!

  1. Buy the FANTASTIC BRAND taco filling, or sloppy joe filling, it is so good and on the back of the boxs there are some really great recipes.


  2. Mexican! Quesedillas and fajitas don't even require rice & beans. :-)  Just use interesting peppers, onions, mushrooms and top with some guac.  Even my meat-loving husband doesn't complain when we eat these things veggie style.

  3. How do you feel about butternut squash? I've got a fabulous recipe for garlicky butternut squash with penne.

    Plus, it's summer soon, so fresh veggies will be plentiful... mmm, spinach salad with blackberries and strawberries, grilled eggplant, fresh corn on the cob.

  4. try my recipe Easy Oatmeal pancake

    Makes 2 16cm size pancakes

    *6 tablespoons of Quaker Instant Oatmeal

    *1 tablespoon Plain Flour

    *1/2 tablespoon Sugar

    *a pinch of salt

    *few drops of vanilla Essence

    *125ml or 1/2 cup of water

    1. Mix all above ingredients together till it forms a smooth thick batter.

    2. Heat a non-stick pan.

    3. pour half of the batter into the pan, spread out  the batter with the back of a spoon into a round pancake.

    4. Fry the batter in medium-low heat for about 1and a half minute or till golden brown, turn the pancake over and fry for another minute.

    5. Eat on it own or serve with honey, maple syrup,jam,yogurt,ice-cream or fruits.

    PS: make the pancake without sugar or rice to go with fry mix mushroom, veg curry , fry mix veg etc.

    Also try Kimchi(Korean Persevered veg.), boil potatoes or boil sweet potatoes.

  5. I love eating Asian-style foods. I am a stir-fry junkie. I recently made [Thai] sweet and sour tofu. It was delish!

    If you're not too juiced about cooking, you could always buy some frozen vegetables so you don't have a long prep time- many brands have "stir-fry" or "Asian" blends. Then all you have to do is cook the rice (or quinoa!) and if you'd like, add a protein source like tofu, fake chicken or fake beef.

    I also make lo mien noodles and vegetables and homemade egg rolls.

  6. I am eating a salad now called Bulgur Chickpea Salad.  I found it on allrecipes.com.  

    Your most nutrient-dense foods come from raw leafy green veggies.  Make a huge salad (romaine, green and red leaf, spinach) adding other green veggies (celery, peas, broccoli, peppers), non-green veggies (onions, tomatoes, cauliflower), beans (chickpeas, black beans, pinto beans) and raw seeds.

    Get the book I have listed in my sources.  It's the perfect book for vegetarians, with recipes.
