  1. the best alfredo sauce is made with cream but you do not have to use it all. try mixing it 1/2 cream and 1/2 chicken stock or 3/4 chicken stock and 1/4 cream or use grappa or italian white wine instead of chicken stock or both. you can try using half & half cream but it might separate if you boil it.

    Maybe soy milk or almond milk might work.

  3. Catalina is correct. Alfredo sauce is an Americanized version of an Italian sauce using butter and cream. This sauce is almost exclusively eaten with fettuccine (hence where Americans came up with the idea for "Fettuccine Alfredo") but the sauce is not referred to on its own, and is not made for anything else. Thus, I am afraid you will be hard pressed to find an "authentic italian alfredo recipe". However, if you would like a non-cream based Alfredo recipe, as you inquired, I can be of some help.

    1 tablespoon butter

    1 1/4 cups half-and-half

    3/4 cup (3 ounces) grated fresh Parmigiano-Reggiano

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    Melt butter in a large skillet over medium heat. Add half-and-half, cheese, salt, and pepper; cook 1 minute, stirring constantly. Reduce heat; toss immediately into your favorite pasta (fettuccine perhaps?)

  4. If you go to Italy and ask for "Alfredo" sauce they won't have a clue of what you are asking. There is NO authentic Italian Alfredo sauce because it has been invented in the USA (probably adapted from another Italian recipe which used panna - cream).
