  1. no, none in knoxville either

  2. I don't live in NC so I can't say they're authentic from experience but I did a google search. In my area a lot of Japanese restaurants are run by Koreans so that's one way I measure it, if it's run by Japanese... also, even the ones run by Japanese often hire Mexicans to cook the meat and you wouldn't know it unless you go in the back kitchen, so I don't know if this lowers the authenticity for you. Also, one thing you can't avoid is portion size--tends to be larger in America so you get more value for money imho. I hope one of these is near you and that your experience is pleasant.

    Waraji in Raleigh

appears that the chef is Japanese, menu looks authentic, site has pictures

    Kashin in Cary

    claims to be authentic

    Musashi in Charlotte

    reviewer claims it's authentic

    Yamazushi in Durham

it's owned by Japanese descent people (not sure what generation they are) so some dishes may be American influence, no pictures so I can't say for sure (bear in mind though that modern Japanese cooking has changed due to outside influence so even in Japan you'd have to go to a traditional place for 'authentic')
