  1. Another fantastic dry rub for smoking is called Meathead's Magic Memphis Dust (I think).  I usually peel the silverskin and rub my ribs the night before, wrap them in plastic wrap and let them sit in the fridge until smoke time.  Can't say that my ribs ever came out tasting hammy before, but that's not to say that I haven't had some that didn't come out quite like I imagined.  Be sure to remove the silverskin  membrane from the back of the ribs before you prep them.
