BROILING ASPARAGUS? BAKING RED POTATOES? HELP!

Question

how long do i have to broil asparagus for? should i add anything to it?

and what's a good way to bake red potatoes. i'll cut them up into 1/4s but i dont know what to add to it..

ASPARAGUS

coat in olive oil and minced garlic.  place in broiler and cook for about 20 minutes, turning constantly.

POTATOES

get baby new potatoes.  put in pan with melted butter, salt and pepper.  toss and saute until soft, and toss with minced dill. .

First for the potatoes I would coat them in oil: once you've cut them up, put them in a bowl or bag and pour enough oil to coat them. Then I would put maybe a seasoned salt  or garlic powder and dried parsley. Roast them 'til they're golden outside and soft inside. 325 degrees for around 40min. My mom parboils them before baking (that is, she boils them just til the white starch rises to the top of the boiling water) then she coats them in oil and paprika, bakes them for 30-45min.  They come out amazing.

The asparagus can also be coated with olive oil and broiled for 8 to 10 min so they still have that crunch but yet they're cooked. That's how my friend does them.

Get more answers though, as I am not an expert, just recalling what I think I saw done.

The potatoes will take about 20-30 minutes, depending on how they are cut, at 180C.

Cutting them the flat way will make them cook faster.

Asparagus takes about 5 minutes steaming, until they are bright green.

As far as the asparagus goes, I use olive oil, salt and pepper and then broil for a few minutes.

Paula Dean has the BEST recipe for asparagus that is soooo easy. It a a must! She wraps a few sheets of buttered phyllo dough around the base of the asparagus. Then sprinkles it with parmesan before putting it in the oven. Its so easy and good.

These are great

HERB-ROASTED NEW POTATOES

Yield: 6 Servings

1 lb 14 oz small red potatoes,

.unpeeled (or russets)

1/4 c Chopped fresh basil or 1 tsp

.dried basil

1 tb Chopped fresh oregano or 1

.tsp dried

1 tb Olive oil

1/2 ts Salt

1/4 ts Black pepper

2 1/4 oz Grated parmesan cheese

1. Preheat oven to 425F. Cut the potatoes into 6-8 wedges each.

2. In a large bowl, combine the basil, oregano,oil,salt and pepper.

Add the potatoes and toss to combine.

3. Place the potatoes on a nonstick baking sheet and sprinkle with

parmesan cheese.

4. Bake for 20-25 minutes of until tender and golden brown.

VARIATION: Instead of red potatoes, use small Yukon Gold or Finnish

Yellow potatoes, both of which have yellow flesh. Substitute 2 t.

chopped dried rosemary for the basil and oregano.
