Back to back xmas meals at my place - HELP!!?

Geez, how did I agree to this!!! : ) I'm having christmas eve dinner with the fam at my place, then the inlaws and other people are coming for christmas day lunch. Both must be outstanding. Any tips on how to cope? Would it be bad to cheat and make a bit more of something the day before? Any recipes that you think could help me would be GENIOUS!!!! thanks!!

    fruit tray

    vegetable tray

    hot pizza dip

    7 layer dip

    Dinner:

    ceasar salad (buy the kit)

    Ham

    crock pot mashed potatoes

    hawiian rolls (store bought orange pkg)

    green bean cassarole

    Dessert

    Ice cream pie

    strawberry shortcake

    or brownie sundae


  2. FIRST YOU HAVE TO KNOW HOW MANY PERSONS ARE GOING TO DINNER ON XMAS EVE. I USUALLY BAKE ATURKEY, AND POTATOES OU GRATIN , COOK THE POTATOES A DAY BEFORE, PPEEL THEM CUT THEM EN SLICES ADD YELLOY CHEESE AN D A BIT OF CREAM, AND ABOUT 30 MINUTES BEFORE DINNER TOSS THEM IN THE OVEN, MAKE A NICE SALAD WITH NUTS APPLES AND VIANGRET ,KRAFTS, CUT THE LETUCE THE DAY BEFORE AND JUST FIX IT IN AFEW MINUTES, GET A GOOD WINE RED, FRENCH, OR WHITE OR OTH. AND FOR THE NEXT DAY, YOU CAN SERVE A SALMON, HAVE IT CLEAN AT THE SUPERMARKET, PUT SOME OLIV OIL, CHOPPED ONION, AND CILANDRO, , YOU DO THIS THE DAY BEFORE , PUT IN THE FRIDGE, COVERED, SERVE A SIDE DISH, LIKE A PASTA, SPAGUETII WITH PARMESSAN CHEESE, LOTS OF IT, AND BREAD, ALSO CHOOSE GOOD WINE. SET THE TABLE TWO DAYS BEFORE, AND FOR LUNCH MAKEIT MORE CASUALLIKE ABUFFET, HPE THIS HELPED, GOOD LOCK AND MERRY XMAS, O AND BY THE WAY FOR A BUFFET YOU CN ASK EACH PERSON TO BRING SOMETHING THEY  LIKE AND YOU ARE SET.

  3. Make as much as you possibly can one or two days before the meals.  

    Endive and Gorgonzola Salad Recipe

    Ingredients

        * 1 hard cooked egg, chopped

        * 4 artichoke hearts, chopped

        * 1 shallot, minced

        * 2 Tbs mayonnaise

        * ½ tsp salt

        * ½ tsp black pepper, freshly ground

        * 1 Tbs fresh basil, chopped

        * ½ cup Gorgonzola cheese, crumbled

        * 6 endive leaves, separated and cleaned

        * 3 sprigs of parsley, chopped

    Directions

       1. Combine the eggs, artichoke hearts, shallot, mayonnaise, salt, pepper, basil, and Gorgonzola cheese, mixing well.

       2. Cover and chill for at least 1 hour.

       3. Spread the endive leaves with cheese mixture.

       4. Sprinkle with parsley.

       5. Arrange on a serving dish.

  5. WOW.  Yes, you should make as much prep as possible ahead of time.  Less stress.  Quick and easy is a way to go.
