Baked and Grilled Chicken recipe???

Question

Does anyone know any fast and easy baked and grilled chicken recipes??? I'm trying to change my diet to be a little healthier...Nothing too exotic, I have simple taste...

Orange Juice Chicken

6 cups OJ

Chicken (any you like its good on dark or light meat)

Light bron sugar

Rub sugar on one side of chicken. place in a 9" x 13" pan. add enough oj to cover the chicken to the top. Bake in oven at 375 degrees Feirnheit for 3 1/2 hours (or until done) checking oj level every 45 mins. If needed add more oj. Side dishes: mashed potatoes, rice, and green veggies.

Grilled Chicken with Fresh Tomatoes and Thyme

2 chicken b*****s, airline cut*

1 1/2 cups red and yellow cherry tomatoes, cut in half

2 tablespoons chopped sun dried tomatoes

2 teaspoons capers (optional)

1/2 teaspoon minced garlic

2 teaspoons fresh thyme leaves

2 tablespoons olive oil (or lemon flavored olive oil)

2 tablespoons wine vinegar

Salt

Pepper

Thyme sprigs for garnish

Heat grill to medium high heat. Grill chicken b*****s, turning once (about

7 minutes per side). Meanwhile, in large skillet add tomatoes, sun dried tomatoes, capers, garlic, thyme, oil, vinegar, salt and pepper. Heat only until warm. Spoon mixture over chicken breast; garnish with thyme sprigs and serve.

I just marinate washed chicken b*****s (boned or boneless, no skin) in Lime juice, garlic and whatever leftover white wine, also some dried basil or oregan.

Use Pam spray and bake loosely covered. Take the cover off the last 10 minutes.  Make enough for the week and yiou can cut it up into salads ir in tortillas.  Good Luck

go get some meat rubs from the store. They have really good one that add a little kick. I like mine on the grill or int he grill pan the best.
