  1. Look up the story for the Neiman Marcus Cookie at snopes.com.  Then you will have a story to go with the great cookies.


  2. Mix up a batch of peanut butter cookie dough , roll it into balls about 1 inch or the size of a gumball. place in a mini muffin pan and bake about 8 min @ 325 degrees ( 160C) until set and lightly brown. When you take them out of the oven press a mini peanut butter cup into the center. Let cool and remove from pan. If you don't let them cool a bit they will be difficult to remove.  These are a hit whenever I make them.

    Chocolate Chip Cookie Dough Brownies

    Ingredients

        * 1 cup chocolate chips

        * 1/2 cup butter, softened

        * 1 cup sugar

        * 3 eggs

        * 1 teaspoon vanilla extract

        * 1 1/4 cups flour

        * 1/4 teaspoon baking soda

        * 3/4 cup chopped walnut (optional)

    Cookie Dough Layer

        * 1/2 cup butter, softened

        * 1/2 cup packed brown sugar

        * 3 tablespoons milk

        * 1 teaspoon vanilla

        * 1 cup flour

        * 1 cup chocolate chips

    Directions

       1. Brownie Layer---.

       2. Melt chocolate chips and cool slightly; set aside.

       3. Cream butter and sugar; add eggs and vanilla;mix well.

       4. Stir in melted chocolate.

       5. Combine flour and baking soda; add to batter;stir in nuts.

       6. Spread in greased 13in x 9in pan

       7. Bake at 350 degrees for 16-22 minutes or until toothpick inserted near centre comes out clean.

       8. Cool on wire rack.

       9. Cookie Dough Layer---.

      10. Cream butter and sugars.

      11. Beat in milk and vanilla.

      12. Gradually add flour.

      13. Stir in chocolate chips.

      14. Drop by tablespoonfuls over cooled brownies; carefully spread over top.

      15. Store in refrigerator.


  4. Ranger Cookies- not sure where these originated, but a classic Texas Cookie and a great combo of crispy and sweet:

    Ranger Cookies

    1 c. shortening

    1 c. sugar

    1 c. packed brown sugar

    2 eggs

    1 tsp. vanilla extract

    2 c. flour

    1 tsp. baking soda

    ½ tsp. baking powder

    ½ tsp. salt

    2 c. quick-cooking oats

    2 c. Rice Krispies

    1 c. flaked coconut

    Directions: In a large mixing bowl, cream shortening and sugars until light and fluffy. Beat in eggs and vanilla. Combine flour, baking soda, baking powder and salt; gradually add to creamed mixture and mix well. Stir in oats, cereal and coconut. Drop by rounded spoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350º for 10-12 minutes or until golden brown. Remove to wire racks.
