Baking salmon in a casserole dish or cake pan?

I posted a similar question earlier. I just thought, maybe instead of like a cookie sheet, I could cook my wild alaskan salmon in a casserole dish or cake pan. I would lay butter on the bottom- skin side down, drizzle a little bit of olive oil over the fish, then season with salt pepper and parmesan cheese. Throw it in the oven for what; about 15 minutes at 375 degrees? Can I cook it like this?

  1. I usually wrap mine in aluminum foil and put on cookie sheet and bake.

  3. sure either one would work.  That sounds good on the cooking temp. I always double check with fish by seeing if a piece will flake off, then you know it's done.

    Pistachio crusted Salmon with an avocado-lime burre.

    Crust the salmon fillets or escallops of salmon (get rid of those bones man)

    Fry/sauté in clarified butter.

    Make a burre blanc (butter sauce)

    Actually a green butter.

    Whole butter with avocado puree and lime juice.
