Question:

Banana ripening?

if i get green bananas and wash them with water...does this mean the chemicals that prevent ripening will be less effective...?

  1. I don't think it would matter as the ripening chemicals will be on the inside of the skin next to the actual banana.  I'm wondering why you'd want to wash the skin as it's not edible.


  2. nope but for the enzyme it will react like taken a bite out of a piece of fruit and then laid it aside for some time? If so, you could not have failed to notice that the damaged fruit turns brown after a few minutes. This reaction is due to the enzyme catechol oxidase which converts catechol to a yellow pigment. Oxygen in the air then converts the yellow pigment to the brown compound melanin.

  3. Some plastic trash bags should speed up ripening because they out-gas ethylene, which is a plant hormone that induces ripening.
