  1. You need the heat the liquor a little bit, in this case you'll use banana liqueur. To ignite, I use one of those long fireplace matches. The flame will rise as high as your head so be sure to lean back unless you want a free haircut.


  2. add a bit of brandy and hit it with a stick lighter.

    *BE CAREFUL* - it will flame quickly!

    Let it burn long enough to dissipate the alcohol.

  4. dark rum, you need to make sure your pan is very hot and the flames are high then add the rum. If it doesn't start, slant the pan in the flames and it will flame.  It must be dark rum to be a true banana foster.  

  5. Basically, when it's done, turn off heat, add 1-2 Tbsp of rum or brandy. Strike a match and touch it over the skillet.  It will ignite.  Swirl skillet to move bananas around in caramel sauce, and serve when flames die out.

    Of course you can dip the pan and let the fumes ignite, as pointed out below....................BUT the mere fact that you have obvioiusly never done this before means you should not try that method.  Use the lighter your first few times until you get comfortable doing it as chefs do.

  8. you just have to tip the pan you are cooking it in enough over the flame so the alcohol catches fire.  you don't have to spill it onto the pilot or anything, the fumes from the liquor will catch and carry the fire through the pan.  good luck.  

    p.s. if you have never done it before, try to have a fire extinguisher handy or something nearby to put out the fire should something else catch ablaze....be safe.
