Question:

Bananna Nut Bread Recipe?

I am looking for a recipe for bananna nut bread that replaces the butter and oil with applesauce. Does anyone have any good recipes that use this substitution? Also, can I just use the same amount of applesauce for what the recipe calls for oil or butter or do I need to use more applesauce to substitute? Thank you, 10 points to the best answer :o)

  1. Yes you use about the same amount of applesauce as you would oil or butter. The batter should be fairly thick. Don't forget you can use buttermilk or yogurt (both non-fat) along with the applesauce.Even adding more banana is ok.

  2. Here you go. Not sure if I would say it is as good as the others, but not bad.

    Banana Nut Bread

    INGREDIENTS

    1 1/2 cups all-purpose flour

    3/4 cup white sugar

    1 1/4 teaspoons baking powder

    1/2 teaspoon baking soda

    1/2 teaspoon ground cinnamon

    2 egg whites

    1 cup banana, mashed

    1/4 cup applesauce

    1/2 cup chopped walnuts

    DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.

In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Fold in walnuts. Pour batter into prepared pan.

Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

  3. BANANA NUT BREAD

    2 eggs

    1 c. sugar

    2-3 ripe bananas

    1 tsp. baking soda

    1/4 tsp. nutmeg

    1/4 tsp. cinnamon

    1/2 c. buttermilk

1 tsp. vanilla, rum, or banana extract

    1/2 c. chopped nuts

    1 tsp. salt

    2 c. flour

Combine all ingredients well in a large bowl using a whisk or an electric mixer at medium speed, adding ingredients in the order listed, and flour last. (You can also use a blender, briefly - do not overprocess).

Pour into well greased and floured loaf pans.

    Bake 45 minutes at 400°F

  4. You can substitute all applesauce or more banana for the oil/butter, but the result will be a dryer end product.  I usually only substitute about 75% - at the most - that way if the recipe calls for 1 C of oil, I still have 1/4 cup in there, and it keeps it moist, but not as dense or as bad for you.

The bread won't be quite the same, but it's still quite yummy.

  7. BANANA APPLESAUCE BREAD

    1 c. sugar

    2 eggs

    2 c. flour

    3 ripe bananas (mashed)

    1/2 c. oil

    1 tsp. soda

    1/2 c. chopped nuts

    1 c. applesauce

Cream sugar and shortening. Add eggs and beat well. Add flour, soda and nuts, blend well. Fold in bananas and applesauce. Bake in greased loaf pan, 350 degrees, 1 hour.

    OPTIONAL FROSTING:

    1/2 c. powdered sugar

    1/4 c. creamy peanut butter

    3 tbsp. milk
