Bar gun water. why does it taste better than tap water? is it the filter system or the residual co2?

Never had a reason to try it, but my guess would be it is still composed of H2O, so I would say it was your overactive imagination.

The water in any place that has a commercial dishwasher will be filtered and probably softened.  Plus it will be colder than what you can get out of the tap.
