Can anyone please tell me how to make barfi?

I recently had some from India. It was so delicous and different from how it is made here in Trinidad and Tobago.

There was the taste of almond, it was covered in silver, and really thin.

  1. Girl, I love East Indian barfi!! The almond one is nice, but when I find the pistachio barfi recipe I'll forward that one to you. That one is boss! Hope the recipe turns out well and don't forget to share :)

    You can also use tinned condensed milk, instead of double cream. If you do, omit the sugar, because condensed milk already has enough sugar. Burfies are often covered with silver leaves in India. They arevery thin sheets of beaten silver which are edible and are available from good Indian stores. Serves 8-12

    Ingredients

    • 250 gm. ground almonds (you can also use ground cashew nuts)  

    • 250 ml. double cream  

    • 250 gm. sugar  

    • 100 gm. ghee or butter  

    • Silver leaf or chandi varak

    Instructions

    1. Grease a flat Swiss roll tray or a flat thali with a drop of butter or ghee, keep aside.  

    2. Heat ghee in a wok or kadhai.  

    3. Add all other ingredients and cook, stirring all the time, until it begins to come off the pan, approximately 5 minutes.  

    4. Spread out evenly in the tray and cover with the silver leaf.  

    5. Cool.  

    6. Cut into squares or diamond shapes. Store in an airtight box.

    Barfi is often flavoured with cashew, mango, pistachio and spices, and is sometimes served coated with a thin layer of edible silver leaf (varak). Visually, barfi sometimes resembles cheese, and may have a hint of cheese to it. For this reason, barfi is sometimes called "Indian cheese cake".     Ingredients

    1 cup ricotta cheese

    ½ cup ghee (clarified butter)

    ½ cardamom powder

    2 cup sugar



    Preparation

    1 Mix ricotta cheese, sugar and cardamom.

    2 Slowly fry the ricotta cheese mixture with ghee in low heat till golden color and get consistent paste.

    3 Pour the same in greased plate and cut it in the diamond shape.

    4 Serve chilled.
