  1. Peking is the old form of the name, which was changed to Beijing to reflect the actual Chinese pronunciation more accurately. People would probably stare blankly if you mentioned Beijing duck, but most folks have heard of Peking duck.  


  2. Bay-jing, but with a soft 'j'. Kinda like 'shing'.

  4. Peking is the old form of Beijing. It was invented by an English guy who had a set of pronunciation guides to go with his letters -- so Peking would actually have been pronounced a different way. Beijing is based on the Russian letters and so it is actually pronounced with two quite staccato sounds (and contrary to popular belief,the j is not a soft j like in French and the word really has no English equivilent in sound). The dish is called Peking Duck because it was made famous in teh era when it was fashionable to say Peking.
