  1. A few grilling tips;

    Start the grill at least 20 minutes before you begin cooking to allow the temp to get up there.

    Skin side down.

    If you want skinless chicken. Take the skin off after you cook it.

    Turn chicken often,  every 5 minutes to prevent burning and get an even doneness.

    Dark meat takes longer. Cook dark meat 30 minutes, white meat 15 minutes.

    If you use BBQ sauce, don’t put it on until the last 10-15 minutes.

    If you want the flavors into the meat of the chicken, use a marinade.

    There's alot more, but this is some of the basics.


  2. To get the true flavor of bbq, you should get some misquite chips from the store. Soke them in water for an hour or so. Make a pan out of tin foil and add some of the chips. Put them on the grill so they will start to smoke. Add as needed and cook you chicken until done.

  3. Get some hickory chips and put them in a shallow tin roasting pan. It will give the chicken a smoky flavor. Very good. Mesquite also works well. You can also doctor up your bbq sauce instead of just using it straight out of the bottle. For chicken I'll usually put a little honey and some kind of diced hot pepper or several good shakes of hot sauce. I also add a little minced garlic to it. Good luck.

  4. go to a recipe site and get a recipe for a spice rub that sounds good to you.  for instance if you are going to cook southwest, make a rub that has cumin, chipotle, etc.  If you just want traditional BBQ chix, look for one with sugar, peppers, maybe garlic, paprika, etc.  Wash chicken and pat dry, sprinkle generously with rub.  Preheat gas grill to about 400 degrees.  Cook chicken maybe 4 minutes on each side (this is for bone-in chicken), just to brown up the outside and seal in the juices.  Reduce heat to the LOWEST temp and continue cooking until chicken is done.  This is the trickiest part as chickens vary greatly in size and grills vary greatly in temp.  With a meat thermometer the chicken should be about 175 degrees, check a thick piece like a large breast.  When you twist the drumstick the bone should move pretty easily.  when you've determined it is done, baste both sides with your favorite BBQ sauce.  Good Luck

Make a rub with Extra Virgin Olive Oil and some aeromatic herbs... your choice... whatever you like for herbal flavors... then coat the chicken with the oil/herb mixture and cook to an internal temp of 180 degrees.  If you MUST put BBQ sauce on it.. .don't put it on until just a few minutes before you take the chicken off the grill or it will burn.
