How does a bear taste like?

  1. It tasts like it smells...sorta. Kinda like dog, but stringie and tougher. A bear in the fall tasts different than a spring bear too.  The fall bear eats best, i think.

      The trick to good bear meat is getting the fat and meat seperated when you butcher it. The leaner it is, the better it 'eats' as far as i'm concerned.

      The meat should age cold, too.. not cool, or just shadded up, but cold...  and well ventalated. It cooks up dryer that way, less moisture means less gamie tast to the meat.

Years ago I had some thick bear steaks I got from a gent in Virginia.  He cured his own hams, and cured the bear right along side.  When it was done, he would slice off thick steaks, flop them on the grill and wallow in the great taste.  I prefer to cook it like pork.  My friends like it when I boil it with some garlic, onions, and bay leaves, then cool and shred it.  Pop it into a cast iron skillet with some tomatoes, onions, and peppers and serve it in warm flour tortillas.  Amazing!

  4. It's been a while since I ate bear meat.  What I remember most was that it was tough, stringy, and very greasy.
