  1. i love brown beans, i saw a receipe earlier for burritos. rice, black beans, cheese, sour cream, veggies.

  2. I found if I used mushrooms as a replacement for meat. Youd be amazed how many dishes there are. and there are so many types of mushrooms just fine the ones you like most. Burger with portabello, pastas etc,...

  3. Yes, getting a variety can be difficult.  What I try to do to make sure everything gets mixed up is every time I go to the grocery store I try to buy something I've never had before.  It might be a vegetable, or a spice, or some kind of meat substitute and then make a meal with it.  Or, if you're not too handy with making up recipes, there are many great sites that have tons of great recipes for vegan/vegetarian diets.  Here are a few to get you started:

    http://vegweb.com/  (recipe section)

    http://www.vegalicious.org/

Also, know that for everything you ate before you changed your lifestyle there is a large chance that there is a tasty animal-free parallel you can find and cook up.  Happy eating!

Or for my favorite Pumpkin Bread recipe try this link:

It's delicious, hearty, and easy to make.  Easily made vegan by using a large banana in place of the eggs.

  4. Try using the mock meats to make vegetarian versions of your favorite non-veg foods. For example:

-Pasta with tomato sauce and Nate's Meatless Meatballs

-Subs with Tofurkey Deli Slices, tomatoes, etc.

-BLTs with Smart Bacon (veggie bacon)

-Stir fry -- veggies and Morningstar Farms Meal Starters Chik'n Strips

Here's one of my favorite recipes:

    Tofu Scramble

1 box Mori-Nu silken firm tofu, patted dry and mashed

    1/8 tsp. turmeric

    1 tsp. onion powder

    1/2 tsp. salt

1/2 cup of veggies (I use red & yellow peppers. You can use your favorite veggies -- tomatoes, broccoli, fresh mushrooms, onions, etc.)

Put the tofu in a lightly oiled sauté pan and cook over medium heat for 3 minutes. Add the remaining ingredients, stir well, and cook for 5 to 8 minutes, until the vegetables are cooked and the tofu is heated through.

    Enjoy!
