When I make fish and chips, I use whatever lager we have around.  I don't use the dark "beers" as the flavor tends to overpower the fish and makes it taste "heavy".  A good rule of thumb that I have always used in cooking with beer or wine is.....If you like to drink it, it is perfect to flavor your food with.  Good Luck and Good Eating!
