Besides garlic bread, what would go good with fettucine alfredo?

  1. Any good meal requires a variety of textures, tastes, smells and, yes, even colours.

    Spinach salad is excellent with Fettucine Alfredo.  It's light, and provides lots of texture, taste and colour contrast.  With baby spinach leaves, try adding grape tomatoes (for colour), celery (for crunch), and radishes (bitter radishes balance the sweet tomatoes ... and radishes offer great colour).  Top with a simple Olive Oil and Vinegar dressing.

    As well, simple white bread.  Bread is not meant to be cut cleanly and neatly and put on a plate.  It's meant to be torn in two, and placed in a basket in the center of the table.  Whenever someone wants some, they simply tear some off.  Barbaric, right?  Yeah ... great, isn't it?

    With your meal, I'd recommend a good red wine.

    For dessert: Alfredo is a heavy cream sauce, so by the end of the meal, you want to clean your palate.  A light fruit plate is perfect; blackberries, strawberries, melon, grapes, and small pieces of apple covered with a light drizzling of raw honey.  I don't recommend bananas for two reasons: they're heavy, and they contain triptophan, which will put you and/or your guests to sleep.

    Above all, eat slowly.  Take your time and savour each bite.  Meals shouldn't take 10-15 minutes to eat.  They can linger for an hour or more.  Slow down, enjoy what's in front of you and the company of family and friends.

  10. I always add some peas in at the end. I'll just nuke some in a small container and add it to the sauce.

  18. What about sauteed green beans with bits of carmelized onions or shallots?  

    After green beans are cooked, drizzle with a balsamic vinegar or a squeeze of fresh lemon juice.  The acidity and crispness of the green beans should contrast nicely with the creamy richness of the fettucine alfredo.
