Best Kayak for South Florida?

I live in South Florida and am really interested in getting into kayaking. I don't have much space for storage (1 bedroom apartment) and don't particularly want to add a rack on top of my car but it's an option. Basically, I'd like to kayak around the intercoastal, check out the scenary, and get a little exercise. Nothing too serious but I would like to get around a bit. I'd like to get a two person kayak for my wife and/or small dogs to come along. Are there any inflatable kayaks that could do the trick or do I need to really just get a more traditional kayak? Any advice would be greatly appreciated...
