Not sure where you're from, but the US dollar is taking a beating so affordable destinations are changing.

For an all inclusive resort, I'd suggest the Dominican Republic.  You can still get some good deals, pay in advance, and not worry about a thing while you're there.

To stay domestic, you can try Florida or Puerto Rico.  If you travel in the spring (but after spring breaks), you can find some good deals in May/June.

Further afield, you can do good affordable trips (except for airfare) in Southeast Asia -- Thailand, Laos, Vietnam, etc.

There are also decent packages to Costa Rica, where you can see the rain forest, mountains, and beaches.  

You can go to Brazil or Argentina in off season (winter is June-Sep) and have more affordable hotels.
