Best cookie recipes!?

What is the best recipe for getting crunchy, slightly chewy in the middle, chocolate chip cookies? I have tried som many different things, but it does not seem to work!

Advice is greatly appreciated.

  1. The secret for getting them soft and/or crispy isn't so much the recipe, it's mostly the baking sheet you use to bake them on (although butter/oil/shortening is a factor).  I absolutely love the stoneware from Pampered Chef, it bakes them perfectly.

    This may be hard to believe (considering I have a huge collection of cook books and bake frequently) but my favorite recipe for chocolate chip cookies is the one on the Nestle Toll House chocolate chip bag.  (Make sure you cool them on a wire rack.)

    I can't figure out for the life of me how to make a crunchy cookie either!

    But since this is the recipe section I'll share my favorite cc cookie recipe :

    Treasure chip cookies

    1 1/2 cups graham cracker crumbs

    1/2 cup all-purpose flour

    2 teaspoons baking powder

    1 (14 ounce) can sweetened condensed milk

    1/2 cup butter, melted

    1 1/3 cups flaked coconut

    2 cups semisweet chocolate chips

    1 cup chopped pecans (or walnuts)

    1) Preheat oven to 375 degrees F (190 degrees C).

    2) In a small bowl mix cracker crumbs, flour and baking powder.

    3) In a large mixing bowl, beat condensed milk and margarine until smooth.

    4) Add cracker crumb mixture and blend well. Stir in coconut, chocolate chips, and pecans.

    5) Drop by rounded teaspoon on a cookie sheet sprayed with non-stick spray. Bake 9-10 minutes or until lightly browned. Store loosely covered at room temperature.

    I usually add some cherries in - rehydrated dry OR marachino .  

  3. I like my cookies the same way :o)

    As I understand it, cookies get totally crunchy when they've been over-cooked.  Try your regular cookie recipe but take them out of the oven as soon as the "shine" disappears from the tops of them.

    Or, try this recipe if you'd like.  I always use it and it makes the best cookies!  There's an absolute ton of butter in them but the way they taste makes it worth it!

    Chocolate Chip Cookies

    3/4 c granulated sugar

    3/4 c packed brown sugar

    1 c softened butter

    1 tsp vanilla

    1 large egg

    2 1/4 c all purpose flour

    1 tsp baking soda

    1/2 tsp salt

    12 oz bag or 2 c semi-sweet chocolate chips

    1.  Heat oven to 375F

    2.  Beat sugars, butter, vanilla and egg in a large bowl with electric mixer on medium speed, or mix with spoon.  Stir in flour, baking soda and salt (dough will be stiff).  Stir in chocolate chips.

    3.  Drop by rounded tablespoonfuls about 2 incles apart onto ungreased cookie sheet (I use a Silpat).

    4.  Bake 8 to 10 minutes or until light brown (centers will be soft).  Cool 1 to 2 minutes; remove from cookie sheet to wire rack.

  4. Mrs. Field's cookie recipes are great - they turn out right every time! Try to grind up the oats in a food prcessor so it's like a flour. Makes bigger cookies that are cooked at lower temp for longer!

        4  cups flour

        2  tsp. soda

        2  cups sugar

        5  cups blended oatmeal**

        24 oz. chocolate chips

        2  cups brown sugar

        1  tsp. salt

        1  8 oz. Hershey Bar (grated)

        4  eggs

        2  tsp. baking powder

        2  tsp. vanilla

        3  cups chopped nuts (your choice)

      ** Measure oatmeal and blend in a blender to a fine powder.  Cream the butter and both sugars.  Add eggs and vanilla; mix together  with flour, oatmeal, salt, baking powder, and soda. Add chocolate  chips, Hershey Bar and nuts.  Roll into balls and place two inches  apart on a cookie sheet.

      Bake for 10 minutes at 375 degrees.  Makes 112 cookies.
