I've been 7 times to Santiago and I have two favourites and mostly based on location as they are in front of each other:

1. Hyatt Regency: if I have the money I will go to this one (I've been here 4 times) They have a wonderful swimming pool with a huge and luscious garden, 4 restaurants to choose from, tennis courts, spa, and it is steps away from Parque Arauco Mall.

2. Kennedy Hotel: I've been here 3 times, it's a boutique hotel and a bit cheaper and smaller than Hyatt. Nevertheless, it's a great choice with a wonderful breakfast buffet.

Both are in Las Condes and on Av. Kennedy which gives you easy access to any place in Santiago and walking distance to Parque Arauco where you'll fina a money exchange, a supermarket, shops, etc.

Personally I wouldn't stay in the Ritz Carlton because of its location, it's in Las Condes too but in a very narrow street and it has no great view of the city. It is a good hotel but on the other two you will have an excellent view of the cordillera and the city at the same time.
