Best hummus recipes? Tips on how to make it?

The other day I tried making hummus for the first time, and it turned out OK but not great. Hummus is one of my favorite foods but the really good, authentic kinds are expensive at the grocery store so I want to start making my own. Have any good recipes for hummus? Any tips on how to make it, or make it extra delicious? Thanks!!

  1. Firstly I would say avoid the tinned chick peas it may be quicker but the fine nutty flavour is never as good as using dry/soaked ones

    250 g (1/4 lb) chick peas soaked overnight, drain and then cover in a non reactive pan with fresh water bring to boil then lower to a simmer until peas are tender, drain and allow to cool (reserve some water)

    All other ingredients you add according to your taste but traditionally hummus should be garlicky and with a lemon tang

    mashed garlic (again not bottled or canned)

    lemon juice

    tahini

    virgin olive oil

    don't overload your blender but add chickpeas, garlic and lemon juice and process until smooth (add some reserved water  if it is too thick - Don't add tahini at this stage the mix tends to become very stiff if you do)

    taste and adjust to what you want, mix in tahini by hand

    and drizzle olive oil then use in your favourite way

Here is a basic recipe for hummos, I was married to a middle eastern man for six yrs and I learned quite abit on how to flavor these things.  I like to add a little plain yoghurt to my hummos to give it a more creamy texture. Also, you can adjust the garlic, lemon juice, and tahini to your liking.  Once you get the hang of it you can play a bit and the best way to serve it for company is to spread it on a pretty plate, drizzle olive oil on it and liberally sprinkle cumin on top, then decorate the top of it with olives, toasted pine nuts, and pickled turnips (for a truly arabic feel)  Hope this helps and enjoy!  

    Hummus

    1 (15 ounce) can chickpeas

    1/4 cup tahini paste

    3 tablespoons fresh lemon juice

    1 garlic clove

    1/4 teaspoon ground cumin

    salt and pepper

    Directions

    1Drain beans; reserve water.

    2In a food processor or blender add beans and all the ingredients.

    3Process until smooth.

    4If mixture is too thick, add some of the reserved liquid from the beans to dilute to a desired consistency.

    5Serve at room temperature with pita bread, grilled pork, lamb or chicken.
