I'm not from India but eat Indian food often.  My favorites are

Chicken Korma (Chicken in a creamy mild sauce)

Tandoori Chicken (Chicken cooked on a kebab in a tandoor oven (very high heat)

Chicken Saag (Chicken with a spinach sauce)

Samosa's (pastries with meat or potato)

Bhiriani (Flavorful rice dishes with meat or seafood)

Puri, Paratha, Nan (great breads).  There are variations of these breads that are also stuffed with meat or vegetables that are great too)

(I;m going to butcher this name) Muligatawney soup - Fantastic vegetable soup

Dal (soupy lentil dish that is nicely spiced)

Vindaloo (very hot sauce available in chicken, lamb, goat or vegetable)

Paani-Puri, Panipuri or Gol Gappa is a popular street snack in the Indian sub-continent. It comprises a round, hollow "puri", fried crisp and filled with a watery mixture of tamarind, chilli and potato. The name panipuri literally means "water in fried bread". Pani is a hindi word for water and puri (or poori) is an Indian bread that is made by frying dough in oil. It is known as puchka in Eastern Indian states like Bihar, Jharkhand and West Bengal and in Bangladesh. Since the bread is served with special spiced water, it is known as pani poori and as it is round and fluffy it is called gol gappa.

i would go for Marwari cuisine (remember jodha-akbar movie)

Vegetable Biryani

Mutten Curry

Chicken Curry

Beef Curry (this isn't that available because most Indians don't eat beef)

Palak Paneer (spinach with cream and cheese; it's really good)

Naan - it's like flattened bread. It's really good and you can eat it with a lot of curries.

Gulab Jamin - sweet, round balls (dessert)

Ras Malai - dessert. round yellow balls in sweet cream
