Best method to record a phone call?

What is the best method to record a phone call? My company is doing a documentary and some of our interviewees live too far to travel to. We have fairly decent recording equipment.

I've considered using Skype, but I am concerned about the microphone quality on the other end, so if we were to do that, we'd likely ship a good quality mic and some convertor cables.

I've also considered standard telephone, but I'm worried about how the connection will sound.

Any ideas on what else we could do, or suggestions for what've I've said already?
