Willie G's is awesome, great view too. For a quietier environment, Mario pizza and pasta on the seawall is a nice place to dine, it's not as informal as you think. Both have great food. Those are just a couple off the top of my head.

Carmelo's Italian Restaurant and Memorial near Diary-Ashford.

Try the Mosquito Cafe on the Strand in Galveston.  Voted by Zagat's as one of the 15 top rated restaurants in the Houston metropolitan area.  I'm sure they could arrange a beautiful rehearsal dinner for you!
