Have you tried De Dutch Pannekoek House?  Its more like a crepe and not the basic stack of pancakes, but they're really tasty.  I like the apple and cinnamon pannekoek because I have plain tastes, but they have some very interesting sounding things on their menu.  Unfortunately, they don't print the menu on the website (and yes, its a pretty irritating website) but if you're downtown anyway, you may want to check it out.
