Best places to visit while training it between Paris and Barcelona?

On our next big holiday we'd like to travel from Paris to Barcelona (and onwards to Portugal). What are some good places to stop along the way? Preferably avoiding cities and definitely with good food and wine.

It's going to be hard to have someone give you special place with  u asking to avoid cities bc there are only cities between them. What about staying @ local places between the big cities kind of ruffin it n then splurge in Nice Fr :0))

I don't think that you will have much say in the matter.  Trains in Europe run to pre-determined schedules, so whether or not the stops are good places will be a matter of chance.
