  1. Wow, one month holiday! Lucky you!

Maybe you would like to break down your question to questionettes? Because, there are many issues to respond?

In addition to above answer, which I agree with, I suggest Kanaat Lokantası in Üsküdar/İstanbul for traditional, quality food (non-kebap) with reasonable prices. It is near the sea and easy to find.

And bring me some of those oversize Mexican red beans, will you? I mean to grow them in the garden. ;)

  2. To my mind, you should visit in spring and autumn. Also, for summer vacation, you can prefer Antalya or Bodrum. If you like to visit historical places, you can prefer east cities like Mardin. In Mardin you can taste food that you have never tried. Hope to be helpful..

of course first of all Beyoğlu; the hearth of istanbul i think, you will love it.

you should see Bosphorus, you will love it too.

if you wanna see some historical places, you must see Sultanahmet, you can find Sultanahmet Mosque and Ayasofya museum there and when you are there don't forget to visit Sultanahmet Köftecisi (for dinner or lunch dont know).

you can take a boat tour too, to feel "Bosphorus Magic".

  4. Early or late summer is best (April-June, September-October), but any time of the year is ok.  July and August are very hot and the winters are cold (extremely in some areas) and wet.

Istanbul and Cappadocia are excellent choices, Ankara is less obvious. For other places it depends what you like.

If you like ancient history you should consider at least one of the following: Troy, Ephesus, Bergama, Aspendos, Priene, Perge, Side, Kaunos, Knidos etc

You might want to spend some time on either the Aegean or Mediterranean coast, which you could combine with the above sites.

If you have time, both the Black Sea and the east of the country are well worthwhile, too.

Food - mostly all good. Lokanta type food is good and also very cheap.

Distances are vast so think about taking a plane if you decide to cross country, otherwise the coach services are excellent but you may spend half your holiday sitting on one!
