Best thing to do with 2000 VW Jetta VR6?

What is the cheapest but quality things i can do to my jetta performance wise?

By far getting a performance software upgrade like GIAC, or APR is the best bang for the buck.  Starts at like $399 and will throw your head back in the seat, and smoke your tires.  Then you can mess with getting a posi unit, called a qwafe, installed in your trans.  Coilovers, Rims, Tires....

We have 300+ horsepower cars come to the shop all the time.

Just put an intake on it, it sounds pretty cool for those VR6 engines(my buddy did the same thing), maybe an exhaust but those are kinda expensive cause their designed kinda funky.
