Best time to trim a fig tree in Southern California?

My fig tree hasn't been trimmed before and it's gotten fairly tall. I'm missing out on a lot of the fruit that's too high. I've seen advice on trimming fig trees for areas that have very cold winters, but we don't get those types of winters here. When should I trim and how much is safe to cut back? The tree has some thick (1"+) vertical branches that go up 12-18 feet.
