Best type of engineer?

which makes the most money, less work and is enjoyable.

which degrees would you need for it?

and the pay roll/salary per year?

Currently, mining engineers are making the most money, however this comes with being in isolation and spending time in the mines so it's definitely not free money.

All disciplines can have the same work-load, that depends on the job, not the discipline

I personally enjoy Mechanical engineering. I enjoy gadgets and gizmos and the physics of things moving. Others enjoy electrical circuits or environmental etc etc. Only you can really decide what is most enjoyable. At my university, Mechanical is one of the most applied for disciplines.

Pay depends on experience, skill, location etc. Very Generally, a new graduate can expect at least $40k/year. However, I know students on summer positions who still have 1 or 2 years to go and they're making $27/hour (over $50k/year)

There are indeed positions that don't require too much work as an engineer. However, there is no way to get through University without working very hard. I assure you it's worth it though.

Well, all have more or less equal amounts of work.  If you main goal is having "less work", I wouldn't suggest going into engineering as you will not make a good one.  I would suggest going into business or just getting on welfare if "less work" is a priority for you.

Enjoyable would be guaged by your interest.  Are you fascinated by structures like bridges?  Be a civil engineer.  If you like electronics, be an electrical engineer.  Etc... you should see a pattern there.  If you don't find any engineering discipline interesting, again it probably isn't for you.
