Best video camera to create professional looking videos?

Hi all, i'd like to make some professional looking video for documentaries, interviewing, podcasts etc.

What advise would you give with regards to what camera?

Not knowing much about videoing, I've looked on the internet and i'm totally confused. I just want something easy to handle but will do professional looking quality video. So any advice on cameras and or software would be appreciated.

You can't go wrong with Sony cameras but the Flip Ultra series are also great gadget cams.
