In the example of oxidation and antioxidants described in the program, the compound in the salmon sperm extract is apparently giving up its electrons to oxygen more readily than are the molecules in the food products that are being protected. As electrons move from the molecule to oxygen, is energy given off, or is energy required, to drive the reaction?
