What is her favorite? You could also go the cupcake route.

You could have different flavors of cupcakes ,icings and decorations.

It saves you from having to cut and serve cake.

What is her favorite book or toy maybe you could do a theme cake based on it.

Ice cream cake--but make it differently

Here's two ideas:

Ice cream sandwich sheet cake:

layer unwrapped ice cream sandwiches into a rectangular plastic dish; cover with layer of cool whip; layer unwrapped ice cream sandwiches onto top of the layered cool whip;

Top the second layer of ice cream sandwiches with another layer of cool whip. Garnish with chocolate  syrup and candies.

Punch bowl cake  with cake; fruit, pudding, cool whip

Ice cream cone "cup" cakes; iced of course.

Make ahead small cup parfaits with ice cream, cool whip, chocolate syrup; candy toppings.
