Bizarre guacamole?

I was looking at the ingredients to some guacamole on holiday and found one ingredient was called 'cheese preparation'- any idea what that is and why the heck it's in guacamole?

  1. Maybe it's another term for cream cheese (like Philidelphia) which is a *must* in guacamole in my opinion.

    Just a idea. I'm probably wrong.

  3. I can't find a recipe for guacamole in my culinary library with cheese either.

    However, I do know that our ex-colonial cousins will put that 'plastic cheese' they put in burgers in all sorts of other things as well.

  4. The only way that I've ever seen guacamole with cheese on top, as a garnish is called Queso Fresco (similar in taste and texture to Feta)

    But, why ruin the great taste of avocados and the other ingredients??  Cheese goes with a LOT of things but some things are best left simple......

  5. Don't know.  When I make guacamole I use tomatoes, avocados, lemon, garlic, chilli powder, and Tabasco.  I never use cheese.  I have just looked through all my cookery books and not one of them lists cheese to be used in guacamole.

  6. I used to have a guac recipe that called for adding shredded cheddar to the mix.  perhaps your recipe came from a recipe for preparing a burrito or taco bar or something and part of the overall prep was shredding some cheese.  Maybe they then added some to the guac and left some out for those who wanted more cheese?
